
My uncle used to make these sausage and potato foil packets on cold weekend afternoons, usually after the chores were finished and a football game played quietly in the background. It’s the kind of old-fashioned Midwestern comfort food that proves a meal doesn’t need complicated ingredients to be delicious. Everything is wrapped in foil and baked until the potatoes are tender, the sausage is nicely browned, and the onions are soft and flavorful.
These foil packets are filling enough to serve as a complete meal, but they pair nicely with a fresh green salad, steamed green beans, or a simple side of coleslaw. Warm dinner rolls or buttered bread are also great for soaking up the savory juices. On a chilly evening, serve them with coffee, hot tea, or apple cider for an especially cozy meal.
4-Ingredient Sausage and Potato Foil Packets

Ingredients
- 1 1/2 pounds smoked sausage or kielbasa, sliced into 1/2-inch rounds
- 2 pounds russet or Yukon Gold potatoes, washed and cut into 1/2-inch pieces
- 2 medium yellow onions, peeled and thinly sliced
- 6 tablespoons salted butter, cut into small pieces
Instructions
Preheat the oven to 400°F (200°C). Cover a large baking sheet with foil to make cleanup easier and catch any juices that may escape.
Prepare four large sheets of heavy-duty aluminum foil, each approximately 12–14 inches long. If using thinner foil, double the layers to prevent the packets from tearing.
Divide the potatoes evenly between the four sheets, placing them in the center. Add the sliced onions over the potatoes, followed by equal portions of the smoked sausage.
Scatter pieces of butter over each packet, making sure the butter is distributed across the potatoes, sausage, and onions.
Bring the long sides of each foil sheet together over the filling and fold them down securely. Fold the ends inward to create tightly sealed packets while leaving a little room inside for the steam.
Place the packets seam-side up on the prepared baking sheet. Bake for 35–45 minutes, or until the potatoes are fork-tender.
For more color and crispiness, carefully open the packets and place them back in the oven for another 5–10 minutes.
Remove the packets from the oven and allow them to rest for a few minutes. Be careful when opening them because the trapped steam will be extremely hot.
Serve directly from the foil or transfer everything to plates. Spoon the buttery juices over the sausage and potatoes for extra flavor.
Variations & Tips
Want to make more servings? Add a little extra sausage and potatoes and divide everything into five or six smaller packets.
For a milder version, stick with traditional smoked sausage. If you enjoy some heat, use a spicy sausage instead. Yukon Gold potatoes become especially creamy when baked, while russet potatoes are fluffier and absorb plenty of the buttery juices.
When cooking for a larger group, you can skip individual packets and arrange everything in one large foil-lined pouch on a baking sheet.
These packets can also be prepared on a grill or over a campfire. Cook them over medium heat, turning them occasionally, until the potatoes are tender.
Any leftovers can be reheated in a skillet over medium heat. Let the potatoes get slightly crisp around the edges for an especially tasty next-day meal.
