Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 3 cups cooked rice (white, brown, or wild rice)
  • 3 cups lightly steamed broccoli florets
  • 2 cups shredded cheddar cheese, divided
  • 1 can cream of chicken soup (or cream of mushroom soup)
  • ½ cup milk or chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste

Optional Topping:

  • Extra shredded cheese
  • ½ cup breadcrumbs mixed with melted butter

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

Step 2: Combine the Ingredients

In a large mixing bowl, combine the cooked chicken, rice, broccoli, 1½ cups of cheddar cheese, soup, milk or broth, and seasonings. Stir until everything is evenly mixed and coated.

Step 3: Assemble the Casserole

Transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle the remaining cheese over the top. If desired, add a buttery breadcrumb topping for extra crunch.

Step 4: Bake

Cover the dish with foil and bake for 20 minutes. Remove the foil and continue baking for another 10–15 minutes, or until the casserole is hot, bubbly, and lightly golden on top.

Allow it to rest for a few minutes before serving.
